Cupcakes for Breakfast 2.0

Happy Birthday to Me!
I started this tradition last year because let’s face it, what better way to start your birthday then with cupcakes! Plus the people at work appreciate celebrating with me
I really went back and forth as to what flavor to make this year. The salted caramel cupcakes were a huge hit last year but I had to try something different. I thought about a light and fluffy lemon cupcakes and lemon frosting with a berry filling, carrot cupcakes with a rich and smooth frosting but ultimately went with a dark chocolate cupcake with a peanut butter cream cheese frosting, much like this cake that was so delectable.
The great thing about chocolate cupcakes is that it takes no time, one bowl to mix it up, plop the batter in muffin tins, bake and within an hour I had cupcakes. Last night I whipped up the frosting which was equally easy. I might add a bit more sugar next time to stiffen up the frosting but overall I was quite pleased with the results and they are getting rave reviews in the office.
So another year is upon me. At first I was pretty pissy about getting a year closer to 30 but then I realized how blessed I am to be where I am. I am as healthy as I have ever been, I am happy with my body, I have a supportive and loving boyfriend, a fantastic family what more could a girl want? Well there are some things but hopefully they will come in time :) My attitude turned around when I found out a friend from college died from cancer at 28 and wow it hit me, be happy with life and live it up. You never know when life will turn an unexpected corner (boy do I know that!) but in the end, be happy with what you have done with your life. I am thankful to have the life I have and will make the best of it!

Happy Birthday!!! For the record, I think cupcakes are a perfectly acceptable breakfast any day of the week! : )
